The different types of Iberian ham

Not all Iberian ham is created equal. There are different types and grades of Iberian ham, each offering a unique taste and quality.
1. Jamón Ibérico de Bellota: This is the highest quality of Iberian ham, made from pigs that have been exclusively fed a diet of acorns (bellota). The acorns contribute to the rich marbling and distinct flavor of the ham. The pigs are typically free-range and allowed to roam in the oak forests, feeding on a diet of acorns and herbs.
2. Jamón Ibérico de Recebo: This type of Iberian ham is made from pigs that have been fed a combination of acorns and other supplementary feeds. While not as prized as Jamón Ibérico de Bellota, it still offers a delicious taste and quality.
3. Jamón Ibérico de Cebo: This is the most common type of Iberian ham, made from pigs that have been fed a diet of grain and other feeds. While it may not have the same intense flavor as the acorn-fed varieties, it is still a delectable option.
