Bomba rice expands almost exclusively in length, not width, which means it absorbs flavor without turning to mush. Use a ratio of 1 cup rice to 2.5–3 cups broth. Toast briefly in olive oil before adding liquid. Allow to rest uncovered for 5 minutes after cooking for the authentic socarrat (caramelized crust).
