How to Serve

The sliced packs: 15 minutes out of the fridge, laid flat and separate on a warm plate. The whole lomo: cut the casing, slice it as thin as you can with a sharp knife, and serve it the same way. Open one pack of jamón at a time; the rest stay sealed and fresh until you need them. Add picos de pan, Manchego and a glass of Rioja and the board is done.

Storing

Everything is dry-cured and shelf stable. Unopened packs keep in a cool, dry place or the fridge through the date on the label. The whole lomo keeps for months unopened; once cut, wrap the end and refrigerate. Opened sliced packs: refrigerate and finish within 5 days.
